Restaurant Recipe: Tortilla Republic's Blueberry & Corn Pancakes



This weekend while we were out for brunch at a local diner, I took a bite into The Mr.'s chocolate chip pancake and realized something... Tortilla Republic has the BEST pancakes!! So, it made me want to share their recipe with you all! Enjoy!


Tortilla Republic’s Fresh Corn & Blueberry Pancakes:

  •  Dry pancake flour mix
  • 4 C FLOUR
  • 4 TBS CORN STARCH
  • 1 C PASTRY FLOUR
  • 2 TBS BAKING POWDER
  • 1 TBS BAKING SODA
  • 1 TBS SEA SALT PLEASE SEA SALT ONLY
  • 1/2 C SUGAR


SIFT ALL TOGETHER AND MIX WELL

  •  2 c flour mix ( from the recipe above )
  • 1 egg
  • 3/4 c buttermilk
  • 3/4c milk
  • 1 tsp vanilla
  • 1/4c melted butter
Mix wet ingredients until well incorporated, fold with spatula don't over mix, should be lumpy, let rest for 15 minutes
Take a cast iron skillet and spray with non-stick spray and pour batter into the skillet. Once the edges of batter start to bubble sprinkle some fresh cut corn kernels and fresh blueberries into batter. Then put the skillet in the oven at 350 degrees for 10 to 15 min.
